A healthy and delicious alternative to traditional lasagna, made with layers of zucchini, ricotta, marinara sauce, and mozzarella cheese.

Ingredients
  

Vegetables
  • 3 medium Zucchini Thinly sliced
Cheese Mixture
  • 15 oz Ricotta Cheese
  • 1 cup Mozzarella Cheese Shredded
  • 1/2 cup Parmesan Cheese Grated
  • 1 large Egg
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Dried Oregano
Sauce
  • 2 cups Marinara Sauce Store-bought or homemade

Method
 

Prepare Zucchini
  1. Preheat the oven to 375°F (190°C). Slice the zucchini into thin strips using a knife or mandoline.
Mix Cheese Filling
  1. In a mixing bowl, combine ricotta cheese, egg, salt, black pepper, oregano, and half of the mozzarella and Parmesan cheese. Mix well.
Layer the Lasagna
  1. Spread a thin layer of marinara sauce on the bottom of a baking dish. Layer zucchini slices, followed by cheese mixture, and more marinara sauce. Repeat layers, finishing with marinara sauce on top.
Add Toppings
  1. Sprinkle the remaining mozzarella and Parmesan cheese on top of the final layer.
Bake
  1. Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
Serve
  1. Allow the lasagna to cool for 10 minutes before slicing and serving.

Notes

For extra flavor, you can add fresh herbs like basil or spinach to the cheese mixture.
