Ingredients
  

Fritters
  • 2 medium zucchini grated
  • 1 cup all-purpose flour
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup green onions chopped
  • 1/4 cup parmesan cheese grated
  • 1/4 cup olive oil for frying

Method
 

Prepare the Zucchini
  1. Grate the zucchini and place it in a mixing bowl. Sprinkle with salt and let it sit for 10 minutes to draw out moisture.
Mix Ingredients
  1. After 10 minutes, squeeze out excess moisture from the zucchini. Add flour, egg, black pepper, green onions, and parmesan cheese to the bowl. Mix until well combined.
Cook Fritters
  1. Heat olive oil in a frying pan over medium heat. Scoop about 2 tablespoons of the mixture and flatten it into a patty. Fry for 3-4 minutes on each side until golden brown.
Drain and Serve
  1. Remove fritters from the pan and place them on paper towels to drain excess oil. Serve warm.
