Ingredients
  

Fritter Base
  • 2 medium zucchini grated
  • 1 cup all-purpose flour
  • 1 large egg
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 cup fresh parsley chopped
  • 1/4 cup parmesan cheese grated
Cooking Oil
  • 1/4 cup olive oil for frying

Method
 

Prepare the Zucchini
  1. Grate the zucchini and place it in a clean kitchen towel. Squeeze out excess moisture.
Mix Ingredients
  1. In a mixing bowl, combine the grated zucchini, flour, egg, salt, pepper, garlic powder, onion powder, parsley, and parmesan cheese. Mix until well combined.
Cook Fritters
  1. Heat olive oil in a skillet over medium heat. Drop spoonfuls of the zucchini mixture into the skillet, flattening them slightly. Cook for 3-4 minutes on each side or until golden brown.
Drain and Serve
  1. Remove the fritters from the skillet and place them on paper towels to drain excess oil. Serve warm.
