Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
Wet Ingredients
  • 1 cup shredded zucchini squeeze out excess moisture
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter melted
  • 1 large egg
  • 1 teaspoon vanilla extract
Optional Add-ins
  • 1/2 cup chocolate chips or nuts
  • 1/2 cup oats optional

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine all the dry ingredients and whisk together.
  3. In another bowl, mix the wet ingredients until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fold in any optional add-ins like chocolate chips or oats.
Baking
  1. Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown.
  3. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
