Baking Steps
- Preheat oven to 375°F (190°C). Place the brie wheel in a small cast-iron skillet, oven-safe ceramic baking dish, or parchment-lined baking sheet.
- Using a sharp paring knife, gently score a crosshatch pattern (shallow diamond cuts about 1/8-inch deep) across the top rind. Do not cut all the way through.
- In a small skillet over medium heat, melt the unsalted butter. Add chopped pecans and toast gently for 2 to 3 minutes until fragrant and golden.
- Remove pecan skillet from heat, stir in the honey and chopped rosemary, and spoon evenly over the top of the scored brie wheel.
- Bake uncovered for 12 to 15 minutes at 375°F until the cheese softens completely, puffs slightly, and is warm and molten inside.
- Sprinkle with flaky sea salt and cracked pepper. Rest for 3 minutes, then serve immediately hot with crackers, fresh apple slices, and crusty bread.
