Ingredients
  

Crust
  • 1 each pie crust store-bought or homemade
Filling
  • 4 cups sliced fresh tomatoes about 4 medium tomatoes
  • 1 cup shredded mozzarella cheese
  • 1 cup mayonnaise preferably full-fat
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil for drizzling

Method
 

Prepare the Crust
  1. Preheat the oven to 375°F (190°C). Place the pie crust in the pie dish and set aside.
Make the Filling
  1. In a mixing bowl, combine sliced tomatoes, mozzarella cheese, mayonnaise, basil, oregano, salt, and pepper. Mix well.
Assemble the Pie
  1. Pour the tomato mixture into the prepared pie crust, spreading it evenly. Drizzle with olive oil.
Bake
  1. Bake in the preheated oven for 30-35 minutes, or until the filling is bubbly and the crust is golden brown.
Cool and Serve
  1. Allow the pie to cool for 10 minutes before slicing. Serve warm or at room temperature.
