Ingredients
  

Chicken and Vegetables
  • 1 lb boneless chicken breast sliced into thin strips
  • 1 cup bell pepper sliced
  • 1 cup onion sliced
  • 2 cups fresh Thai basil leaves packed
Sauce
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • 1 teaspoon cornstarch mixed with 1 tablespoon water
Aromatics
  • 4 cloves garlic minced
Oil
  • 2 tablespoons vegetable oil for cooking

Method
 

Prepare the Sauce
  1. In a small bowl, mix together soy sauce, oyster sauce, fish sauce, sugar, and cornstarch mixture. Set aside.
Cook the Chicken
  1. Heat vegetable oil in a wok over medium-high heat. Add minced garlic and sliced chilies, stir-fry for 30 seconds until fragrant.
  2. Add the sliced chicken and cook until browned and cooked through, about 5-7 minutes.
Add Vegetables and Sauce
  1. Add sliced bell pepper and onion to the wok, stir-fry for another 3-4 minutes until vegetables are tender-crisp.
  2. Pour the sauce over the chicken and vegetables, stir well to coat, and cook for an additional 2 minutes until the sauce thickens.
Finish with Basil
  1. Remove from heat and stir in the fresh Thai basil leaves until just wilted. Serve hot over rice.

Notes

For a spicier dish, increase the number of Thai chilies. Serve with jasmine rice for a complete meal.
