Ingredients
  

Pasta
  • 12 oz Pasta (e.g., fusilli or penne) Whole wheat or gluten-free options can be used.
Vegetables
  • 1 cup Cherry tomatoes Halved
  • 1 cup Zucchini Diced
  • 1 cup Bell pepper Diced
  • 1 cup Fresh spinach Chopped
Dressing
  • 1/4 cup Olive oil
  • 2 tbsp Lemon juice Freshly squeezed
  • 1 clove Garlic Minced
  • 1 tsp Salt To taste
  • 1/2 tsp Black pepper Freshly ground
Garnish
  • 1/4 cup Parmesan cheese Grated
  • 2 tbsp Fresh basil Chopped

Method
 

Cook Pasta
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
  2. Drain the pasta in a colander and set aside.
Sauté Vegetables
  1. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute until fragrant.
  2. Add zucchini and bell pepper, cooking for 3-4 minutes until tender. Stir in cherry tomatoes and spinach, cooking until spinach wilts.
Combine and Serve
  1. In a mixing bowl, combine the cooked pasta with the sautéed vegetables. Drizzle with lemon juice and season with salt and pepper. Toss to combine.
  2. Serve warm or at room temperature, garnished with Parmesan cheese and fresh basil.
