Ingredients
  

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter cold, cubed
  • 3-4 tbsp ice water
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 2 cups assorted fresh fruits e.g., strawberries, blueberries, kiwi

Method
 

  1. Preheat the oven to 375°F (190°C). In a bowl, mix flour and granulated sugar. Cut in cold butter until crumbly. Gradually add ice water until the dough forms.
  2. Roll out the dough into a circle and fit it into a tart pan. Prick with a fork and bake for about 20 minutes until golden brown. Allow to cool completely.
  3. While cooling, whip heavy cream until soft peaks form; gently fold in powdered sugar and vanilla extract.
  4. Spread whipped cream over the cooled crust and arrange fresh fruits on top as desired.
  5. Chill for at least one hour before serving.
