Ingredients
  

Chicken and Rice
  • 2 cups cooked rice white or brown rice
  • 1 lb chicken breasts boneless, skinless
  • 1 tablespoon olive oil for grilling
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Street Corn Topping
  • 2 ears corn grilled and kernels removed
  • 1/2 cup mayonnaise or Greek yogurt
  • 1/4 cup cotija cheese crumbled
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon chili powder
  • 1/4 cup cilantro chopped
Additional Toppings
  • 1 avocado sliced
  • 1 lime wedges for serving

Method
 

Prepare the Chicken
  1. Preheat the grill to medium-high heat. Season the chicken breasts with olive oil, salt, and pepper.
  2. Grill the chicken for about 6-7 minutes on each side or until fully cooked. Let it rest before slicing.
Make the Street Corn Topping
  1. Grill the corn until charred, then remove the kernels from the cob.
  2. In a mixing bowl, combine the corn, mayonnaise, cotija cheese, lime juice, chili powder, and cilantro. Mix well.
Assemble the Bowl
  1. In each bowl, layer the cooked rice, sliced grilled chicken, and street corn topping.
  2. Top with sliced avocado and serve with lime wedges on the side.
