  • 1 cup sour cream
  • 2 tsp chili powder
  • 4 cups cooked rice

Method
 

Grilling and Roasting
  1. Preheat your grill to medium-high heat at around 375°F (190°C).
  2. In a bowl, rub chicken breasts with olive oil, minced garlic, salt, pepper, and chili powder.
  3. Grill the seasoned chicken for about 6-7 minutes per side until fully cooked (internal temperature of at least 165°F/75°C).
  4. Meanwhile, roast corn in a skillet over medium heat until lightly charred (about 5-7 minutes). Add diced bell peppers halfway through cooking.
  5. In a separate bowl, mix sour cream with lime juice and chili powder; adjust seasoning to taste.
  6. Fluff the cooked rice in serving bowls and layer with sliced grilled chicken, roasted corn, and peppers. Drizzle with the zesty sauce before serving.
