Ingredients
  

Rice and Vegetables
  • 1 cup long-grain white rice rinsed
  • 1 cup chicken broth or vegetable broth for vegetarian option
  • 1 medium onion finely chopped
  • 1 medium bell pepper finely chopped
  • 2 cloves garlic minced
  • 1 can diced tomatoes with juice
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper adjust to taste
  • 1 tablespoon olive oil

Method
 

Preparation
  1. In the rice cooker, heat the olive oil and sauté the chopped onion, bell pepper, and garlic until softened.
  2. Add the rinsed rice to the cooker and stir to coat with the oil and vegetables.
  3. Stir in the diced tomatoes, chicken broth, cumin, paprika, salt, and black pepper.
  4. Close the rice cooker lid and set it to the 'white rice' setting or equivalent.
Cooking
  1. Once the rice cooker indicates that the rice is done, let it sit for an additional 5 minutes before opening the lid.
  2. Fluff the rice with a fork and serve warm.
