Ingredients
  

For the Smash Burgers
  • 1 lb ground beef 80/20 blend for best flavor
  • 1 tsp salt
  • 1 tsp black pepper
  • 4 slices cheddar cheese or cheese of choice
For the Tacos
  • 8 small flour tortillas or corn tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup sliced jalapeños optional
  • 1/4 cup sliced red onions optional

Method
 

Prepare the Smash Burgers
  1. Preheat a skillet over medium-high heat.
  2. In a mixing bowl, season the ground beef with salt and pepper.
  3. Divide the beef into 4 equal portions and form loose balls.
  4. Place the balls in the hot skillet and smash them down with a spatula to form patties.
  5. Cook for about 3-4 minutes until a crust forms, then flip and add cheese on top.
  6. Cook for an additional 2 minutes until the cheese melts.
Assemble the Tacos
  1. Warm the tortillas in a separate skillet or microwave.
  2. Place a smash burger on each tortilla.
  3. Top with shredded lettuce, diced tomatoes, sour cream, jalapeños, and red onions as desired.
  4. Fold the tortillas and serve immediately.
