  • 1 lb boneless, skinless chicken breasts
  • 1 can black beans rinsed and drained
  • 1 can corn rinsed and drained
  • 1 can diced tomatoes with green chilies
  • 1 cup chicken broth
  • 1 cup onion chopped
  • 1 cup bell pepper chopped
  • 2 cloves garlic minced
  • 2 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup tortilla strips for garnish
  • 1 cup shredded cheese for garnish
  • 1 avocado sliced for garnish
  • 1/4 cup cilantro chopped, for garnish

Method
 

Preparation
  1. Place the chicken breasts in the slow cooker.
  2. Add the black beans, corn, diced tomatoes, chicken broth, onion, bell pepper, garlic, cumin, chili powder, salt, and black pepper.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Once cooked, shred the chicken with two forks and stir back into the soup.
Serving
  1. Ladle the soup into bowls and top with tortilla strips, shredded cheese, avocado slices, and cilantro.
