Preparation
- Place the chicken breasts in the slow cooker.
- Add the black beans, corn, diced tomatoes, chicken broth, onion, bell pepper, garlic, cumin, chili powder, salt, and black pepper.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, shred the chicken with two forks and stir back into the soup.
Serving
- Ladle the soup into bowls and top with tortilla strips, shredded cheese, avocado slices, and cilantro.
