Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash and slice the yellow squash into 1/4 inch thick rounds.
  3. In a mixing bowl, combine the sliced squash, olive oil, salt, pepper, garlic powder, and thyme. Toss until the squash is evenly coated.
Roasting
  1. Spread the squash mixture in a single layer on a baking sheet.
  2. Roast in the preheated oven for 20-25 minutes, or until the squash is tender and lightly browned, stirring halfway through.
  3. Remove from the oven and serve warm.
