Ingredients
  

Pasta
  • 12 oz spaghetti or your choice of pasta
Roasted Tomatoes
  • 2 pints cherry tomatoes halved
  • 4 cloves garlic smashed
  • 2 tbsp olive oil for roasting
  • 1 tsp salt
  • 1 tsp black pepper
Sauce and Garnish
  • 1 cup fresh basil chopped
  • 1/2 cup parmesan cheese grated
  • 1 tbsp balsamic vinegar optional

Method
 

Roast the Tomatoes
  1. Preheat the oven to 400°F (200°C). On a baking sheet, toss the cherry tomatoes and garlic with olive oil, salt, and pepper. Roast for 25-30 minutes until tomatoes are blistered and soft.
Cook the Pasta
  1. While the tomatoes are roasting, bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
Combine and Serve
  1. In a large skillet, combine the roasted tomatoes and garlic with the cooked pasta. Toss in the fresh basil and parmesan cheese. Drizzle with balsamic vinegar if desired. Serve warm.
