Ingredients
  

For the Risotto
  • 1 medium butternut squash peeled and diced
  • 2 tablespoons olive oil for roasting
  • 1 cup arborio rice
  • 4 cups vegetable broth warmed
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1/2 cup dry white wine
  • 1/2 cup parmesan cheese grated
  • 2 tablespoons fresh sage chopped
  • Salt to taste
  • Pepper to taste

Method
 

Prepare the Butternut Squash
  1. Preheat the oven to 400°F (200°C). Toss the diced butternut squash with 1 tablespoon of olive oil, salt, and pepper. Spread on a baking sheet and roast for 25 minutes or until tender.
Cook the Risotto
  1. In a large saucepan, heat the remaining tablespoon of olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
  2. Add the arborio rice and stir for 1-2 minutes until the rice is lightly toasted.
  3. Pour in the white wine and cook until absorbed.
  4. Gradually add the warmed vegetable broth, one ladle at a time, stirring frequently, until the rice is creamy and al dente, about 18-20 minutes.
  5. Stir in the roasted butternut squash, parmesan cheese, and chopped sage. Season with salt and pepper to taste.
