Ingredients
  

Salad Ingredients
  • 4 medium beets trimmed and scrubbed
  • 4 cups mixed greens such as arugula or spinach
  • 1 cup goat cheese crumbled
  • 1/2 cup walnuts toasted and chopped
Vinaigrette
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey
  • 1 clove garlic minced
  • salt to taste
  • pepper to taste

Method
 

Prepare the Beets
  1. Preheat the oven to 400°F (200°C). Wrap each beet in aluminum foil and place them on a baking sheet.
  2. Roast the beets for about 45 minutes or until they are tender when pierced with a fork. Allow to cool.
  3. Once cooled, peel the beets and cut them into wedges.
Make the Vinaigrette
  1. In a mixing bowl, whisk together olive oil, balsamic vinegar, honey, minced garlic, salt, and pepper until well combined.
Assemble the Salad
  1. In a large bowl, combine the mixed greens, roasted beet wedges, crumbled goat cheese, and toasted walnuts.
  2. Drizzle the vinaigrette over the salad and toss gently to combine.
  3. Serve immediately.
