Ingredients
  

Breakfast Quinoa Bowl
  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup mixed berries fresh or frozen
  • 1 tablespoon honey optional
  • 1 tablespoon chia seeds
  • 1 cup almond milk or any milk of choice
Savory Lentil Stew
  • 1 cup green lentils rinsed
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 carrots diced
  • 1 can diced tomatoes 14 oz
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • 1 cup spinach fresh
Healthy Snack Energy Balls
  • 1 cup oats rolled
  • 1/2 cup peanut butter or almond butter
  • 1/4 cup honey
  • 1/4 cup flaxseed ground
  • 1/2 cup dark chocolate chips optional

Method
 

Breakfast Quinoa Bowl
  1. In a pot, combine quinoa and water. Bring to a boil, then reduce heat and simmer for 15 minutes until water is absorbed.
  2. Fluff quinoa with a fork and stir in almond milk, honey, chia seeds, and mixed berries.
Savory Lentil Stew
  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
  2. Add carrots, lentils, diced tomatoes, vegetable broth, cumin, and paprika. Bring to a boil, then reduce heat and simmer for 30-40 minutes until lentils are tender.
  3. Stir in spinach just before serving.
Healthy Snack Energy Balls
  1. In a bowl, mix oats, peanut butter, honey, flaxseed, and chocolate chips until combined.
  2. Roll mixture into small balls and refrigerate for at least 30 minutes before serving.
