Ingredients
  

Meringue Base
  • 4 large egg whites at room temperature
  • 1 cup granulated sugar superfine sugar preferred
  • 1 teaspoon cornstarch
  • 1 teaspoon white vinegar
  • 1 teaspoon vanilla extract
Topping
  • 1 cup heavy cream for whipping
  • 2 tablespoons powdered sugar to taste
  • 1 cup mixed fresh fruits such as berries and kiwi

Method
 

Prepare Meringue
  1. Preheat the oven to 225°F (110°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat the egg whites until soft peaks form.
  3. Gradually add the granulated sugar, continuing to beat until stiff peaks form.
  4. Gently fold in the cornstarch, vinegar, and vanilla extract until just combined.
  5. Spoon the meringue mixture onto the prepared baking sheet, shaping it into a circle about 8 inches in diameter.
  6. Bake in the preheated oven for 1.5 hours, then turn off the oven and let the meringue cool inside for an additional hour.
Assemble Pavlova
  1. Whip the heavy cream with powdered sugar until soft peaks form.
  2. Once the meringue is completely cool, top it with the whipped cream and arrange the fresh fruits on top.
  3. Slice and serve immediately for the best texture.
