Ingredients
  

Crust
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter cold and cubed
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 2 tablespoons cold water
Filling
  • 1 cup heavy cream whipped
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups mixed fresh fruits such as strawberries, kiwi, and blueberries

Method
 

Prepare the Crust
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine flour, butter, and sugar until crumbly.
  2. Add the egg yolk and cold water, mixing until the dough forms. Press the dough into the tart pan evenly.
  3. Prick the bottom with a fork and bake for 20-25 minutes or until golden brown. Let cool.
Prepare the Filling
  1. In a bowl, whisk together the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  2. Spread the whipped cream mixture evenly over the cooled crust.
  3. Arrange the mixed fresh fruits on top of the cream filling.
Serve
  1. Chill the tart in the refrigerator for at least 30 minutes before serving.
  2. Slice and enjoy your pastel de frutas!
