Ingredients
  

Salad Base
  • 1 cup orzo pasta uncooked
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon dijon mustard
  • 1 clove garlic minced
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Orzo
  1. Bring a pot of salted water to a boil and cook the orzo according to package instructions until al dente. Drain and rinse under cold water.
Mix the Salad
  1. In a large mixing bowl, combine the cooked orzo, cherry tomatoes, cucumber, red onion, feta cheese, and parsley.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, lemon juice, dijon mustard, minced garlic, salt, and pepper until well combined.
Combine and Serve
  1. Pour the dressing over the salad and toss gently to combine. Serve chilled or at room temperature.
