Ingredients
  

Pasta and Sauce
  • 1 pound Pasta (penne or rotini)
  • 4 cups Vegetable broth
  • 1 can Diced tomatoes 14.5 oz
  • 2 cups Frozen mixed vegetables
  • 2 cups Shredded cheese Cheddar or mozzarella
  • 1 tablespoon Italian seasoning
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder

Method
 

Cooking the Pasta
  1. In a large pot, combine the pasta, vegetable broth, diced tomatoes, mixed vegetables, Italian seasoning, garlic powder, onion powder, salt, and pepper. Bring to a boil.
  2. Reduce heat and simmer for about 15 minutes, or until the pasta is al dente and most of the liquid is absorbed.
Baking
  1. Preheat the oven to 350°F (175°C).
  2. Transfer the pasta mixture to a baking dish and top with shredded cheese.
  3. Bake for 15 minutes, or until the cheese is melted and bubbly.
