Ingredients

Pasta
  • 12 oz spaghetti or any pasta of choice
Sauce
  • 1/2 cup extra virgin olive oil high quality
  • 4 cloves garlic minced
  • 1/4 teaspoon red pepper flakes optional
  • 1/2 cup fresh parsley chopped
  • 1/2 cup Parmesan cheese grated, for serving

Method

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
  2. Reserve 1 cup of pasta water, then drain the pasta in a colander.
Prepare the Sauce
  1. In a skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing until fragrant, about 1-2 minutes.
  2. Add the drained pasta to the skillet, tossing to coat in the garlic oil. If the pasta seems dry, add reserved pasta water a little at a time until desired consistency is reached.
  3. Stir in the chopped parsley and season with salt and black pepper to taste.
Serve
  1. Serve the pasta hot, topped with grated Parmesan cheese.
