  • 1 cup old-fashioned oats
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup brown sugar
  • 1/2 cup semi-sweet chocolate chips
  • 1 large egg
  • 1/2 cup milk (dairy or non-dairy)

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Mix in the egg, milk, and brown sugar until well combined.
  4. In another bowl, whisk together the flour, oats, baking powder, and a pinch of salt.
  5. Gradually fold the dry ingredients into the wet mixture until just combined; do not overmix.
  6. Gently stir in the chocolate chips.
  7. Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full.
  8. Bake for 18-20 minutes or until golden brown and a toothpick comes out clean.
