Ingredients
  

Salad Base
  • 4 cups mixed greens such as arugula, spinach, and romaine
  • 1 cup cherry tomatoes halved
  • 1 cucumber cucumber diced
  • 1 cup red bell pepper diced
  • 1/2 cup red onion thinly sliced
  • 1/2 cup kalamata olives pitted and sliced
  • 1/2 cup feta cheese crumbled
Vinaigrette
  • 1/4 cup olive oil extra virgin
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dijon mustard
  • 1 clove garlic minced
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the mixed greens, cherry tomatoes, cucumber, red bell pepper, red onion, kalamata olives, and feta cheese.
  2. In a separate bowl, whisk together the olive oil, red wine vinegar, dijon mustard, minced garlic, salt, and black pepper until well combined.
  3. Drizzle the vinaigrette over the salad and toss gently to combine.
  4. Serve immediately, garnished with additional feta cheese if desired.
