Ingredients
  

Pasta
  • 1 cup orzo pasta
Sauce
  • 1 tablespoon olive oil
  • 1 medium lemon zested and juiced
  • 1 clove garlic minced
  • 1 cup vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Garnish
  • 1/4 cup fresh parsley chopped
  • 1/4 cup parmesan cheese grated

Method
 

Cook the Orzo
  1. Bring a pot of salted water to a boil. Add the orzo and cook according to package instructions until al dente.
  2. Drain the orzo in a colander and set aside.
Prepare the Sauce
  1. In a mixing bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, vegetable broth, salt, and black pepper.
Combine and Serve
  1. In the pot, combine the cooked orzo with the sauce and stir until well coated.
  2. Serve warm, garnished with chopped parsley and grated parmesan cheese.
