Ingredients
  

Rice and Base Ingredients
  • 200 grams long-grain rice or basmati rice
  • 1 cup water for cooking rice
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 medium cucumber diced
  • 1 bell pepper red diced
  • 1 cup peas fresh or frozen
  • 100 grams black olives sliced
Proteins
  • 150 grams cooked ham diced
  • 100 grams mozzarella cheese diced
Dressing
  • 4 tablespoons olive oil extra virgin
  • 2 tablespoons white wine vinegar
  • 1 teaspoon mustard Dijon preferred
  • 1 clove garlic minced
  • to taste salt
  • to taste black pepper

Method
 

Prepare the Rice
  1. Rinse the rice under cold water until the water runs clear. In a pot, bring 1 cup of water to a boil, add the rice, cover, and simmer for about 10 minutes until cooked. Remove from heat and let it cool.
Prepare the Vegetables and Proteins
  1. While the rice is cooking, chop the cherry tomatoes, cucumber, bell pepper, and slice the olives. Dice the cooked ham and mozzarella cheese.
Make the Dressing
  1. In a small bowl, whisk together olive oil, white wine vinegar, mustard, minced garlic, salt, and black pepper until well combined.
Combine Ingredients
  1. In a large bowl, combine the cooled rice, chopped vegetables, proteins, and dressing. Toss gently to combine all ingredients.
Chill and Serve
  1. Cover the salad and refrigerate for at least 30 minutes before serving to allow flavors to meld. Serve chilled.
