Ingredients
  

Vegetables
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 pounds fresh tomatoes, chopped
  • 2 cups vegetable broth
  • 1 teaspoon sugar to balance acidity
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh basil, chopped for garnish
Dairy
  • 1/2 cup heavy cream optional for creaminess

Method
 

Prepare the base
  1. In a large pot, heat olive oil over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Stir in the chopped tomatoes, vegetable broth, sugar, salt, and black pepper. Bring to a boil.
Simmer and blend
  1. Reduce heat and let the soup simmer for 20 minutes, allowing the flavors to meld.
  2. Remove from heat and use an immersion blender to puree the soup until smooth. Alternatively, transfer in batches to a blender.
Finish and serve
  1. If desired, stir in heavy cream for added richness. Adjust seasoning to taste.
  2. Serve hot, garnished with fresh basil.
