Main Ingredients
  • 2 tablespoons Olive oil Extra virgin recommended
  • 1 medium Onion Chopped
  • 4 cloves Garlic Minced
  • 28 ounces Canned whole tomatoes San Marzano preferred
  • 1 teaspoon Sugar Optional, to balance acidity
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper Freshly ground
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 tablespoon Fresh basil Chopped, for garnish

Method
 

Cooking the Sauce
  1. Heat olive oil in a saucepan over medium heat.
  2. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in minced garlic and cook for another minute until fragrant.
  4. Add canned tomatoes, breaking them up with a spoon.
  5. Stir in sugar, salt, black pepper, oregano, and basil.
  6. Bring to a simmer, then reduce heat to low and cook uncovered for 20-25 minutes, stirring occasionally.
  7. Taste and adjust seasoning if necessary.
  8. Remove from heat and stir in fresh basil before serving.
