Ingredients
  

Salad Base
  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup cherry tomatoes halved
  • 1 cucumber cucumber diced
  • 1 bell pepper red bell pepper diced
  • 1 cup corn fresh or frozen
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh parsley chopped
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon honey optional
  • 1 clove garlic minced
  • salt to taste
  • pepper to taste

Method
 

Prepare Quinoa
  1. In a pot, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Fluff with a fork and let cool.
Mix Salad
  1. In a large mixing bowl, combine the cooled quinoa, cherry tomatoes, cucumber, red bell pepper, corn, red onion, and parsley.
Make Dressing
  1. In a small bowl, whisk together olive oil, lemon juice, honey, minced garlic, salt, and pepper.
Combine
  1. Pour the dressing over the salad and toss gently to combine. Adjust seasoning if necessary.
Serve
  1. Chill in the refrigerator for 30 minutes before serving for best flavor.
