Ingredients
  

Salad Base
  • 4 cups mixed greens such as spinach, arugula, and romaine
  • 1 cup pineapple chunks fresh or canned
  • 1 cup mango diced
  • 1 cup red bell pepper diced
  • 1/2 cup red onion thinly sliced
  • 1/4 cup macadamia nuts chopped
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or agave syrup
  • 1 teaspoon soy sauce optional
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the mixed greens, pineapple chunks, mango, red bell pepper, red onion, and macadamia nuts.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, soy sauce, salt, and black pepper until well combined.
Combine and Serve
  1. Drizzle the dressing over the salad and toss gently to combine. Serve immediately.
