Ingredients

Pork Marinade
  • 2 pounds pork shoulder cut into 1-inch cubes
  • 1 cup sour orange juice or lime juice
  • 1 tablespoon garlic minced
  • 1 tablespoon thyme dried
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 scotch bonnet pepper whole optional for heat
Frying
  • 4 cups vegetable oil for frying
Serving
  • 1 cup pikliz Haitian spicy pickled vegetables
  • 2 medium plantains sliced and fried

Method

Marinate the Pork
  1. In a large bowl, combine the pork cubes with sour orange juice, garlic, thyme, black pepper, salt, and scotch bonnet pepper. Mix well and let it marinate for at least 2 hours, preferably overnight in the refrigerator.
Cook the Pork
  1. In a pot, add the marinated pork along with the marinade and enough water to cover the meat. Bring to a boil, then reduce heat and simmer for about 45 minutes until the pork is tender.
Fry the Pork
  1. Heat the vegetable oil in a frying pan over medium-high heat. Once hot, add the cooked pork pieces and fry until golden brown and crispy, about 10-15 minutes.
Serve
  1. Serve the griot hot with pikliz and fried plantains on the side.
