Ingredients

Chicken
  • 4 pieces chicken thighs bone-in, skin-on
  • 2 cups buttermilk for marinating
  • 1 tablespoon hot sauce optional for marinade
Coating
  • 2 cups all-purpose flour for dredging
  • 1 tablespoon paprika for flavor
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Frying
  • 4 cups vegetable oil for frying
Sides
  • 4 servings mashed potatoes optional
  • 4 servings coleslaw optional

Method

Marinate Chicken
  1. In a large bowl, combine buttermilk and hot sauce. Add chicken and marinate for at least 30 minutes or overnight.
Prepare Coating
  1. In another bowl, mix flour, paprika, garlic powder, onion powder, salt, and pepper.
Coat Chicken
  1. Remove chicken from marinade, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring even coating.
Heat Oil
  1. In a large skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry Chicken
  1. Carefully add chicken to the hot oil, cooking in batches if necessary. Fry for about 10-12 minutes per side, or until golden brown and cooked through.
Drain and Serve
  1. Remove chicken from oil and drain on paper towels. Serve hot with sides of mashed potatoes and coleslaw.
