Ingredients
  

Chicken and Rice Casserole
  • 2 cups Cooked Chicken Shredded or diced
  • 1 cup Rice Uncooked
  • 2 cups Chicken Broth
  • 1 cup Frozen Mixed Vegetables
  • 1 cup Cream of Chicken Soup
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 cup Shredded Cheese For topping
Beef Stew
  • 1 pound Beef Chuck Cut into cubes
  • 4 cups Beef Broth
  • 2 cups Carrots Chopped
  • 2 cups Potatoes Diced
  • 1 cup Onion Chopped
  • 2 tablespoons Tomato Paste
  • 1 teaspoon Thyme
  • 1 teaspoon Bay Leaf

Method
 

Chicken and Rice Casserole
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine cooked chicken, rice, chicken broth, mixed vegetables, cream of chicken soup, garlic powder, and onion powder.
  3. Transfer the mixture to a greased baking dish and top with shredded cheese.
  4. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbly.
  5. Let cool, then portion into freezer bags and freeze.
Beef Stew
  1. In a large pot, brown the beef chuck over medium-high heat.
  2. Add onions and cook until translucent.
  3. Stir in carrots, potatoes, beef broth, tomato paste, thyme, and bay leaf.
  4. Bring to a boil, then reduce heat and simmer for 1 hour until beef is tender.
  5. Let cool, then portion into freezer bags and freeze.

Notes

These meals can be stored in the freezer for up to 3 months. To reheat, thaw in the refrigerator overnight and bake or heat on the stove until warmed through.
