Ingredients
  

Dough
  • 500 g bread flour
  • 350 ml water room temperature
  • 100 g active sourdough starter
  • 10 g salt
Fall Flavors
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 cup chopped apples preferably tart varieties
  • 1/2 cup walnuts chopped

Method
 

Prepare the Dough
  1. In a mixing bowl, combine the bread flour and salt. In a separate bowl, mix the water and sourdough starter until well combined.
  2. Pour the wet mixture into the dry ingredients and mix until a shaggy dough forms.
  3. Cover the bowl with a damp cloth and let it rest for 30 minutes.
Incorporate Fall Flavors
  1. After resting, add the cinnamon, nutmeg, chopped apples, and walnuts to the dough. Knead gently until incorporated.
  2. Shape the dough into a ball and place it in a lightly greased bowl. Cover and let it rise for 4-6 hours at room temperature or until doubled in size.
Bake the Bread
  1. Preheat your oven to 450°F (232°C) with a dutch oven inside.
  2. Once preheated, carefully remove the dutch oven and place the dough inside. Cover with the lid and bake for 30 minutes.
  3. Remove the lid and bake for an additional 15 minutes until golden brown.
  4. Let the bread cool on a wire rack before slicing.
