Ingredients
  

Cake Batter
  • 2 cups all-purpose flour
  • 1 cup pumpkin puree canned or homemade
  • 1 cup granulated sugar
  • 1 cup brown sugar packed
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 cup chopped pecans optional
Glaze
  • 1 cup powdered sugar
  • 2 tablespoons milk or more for desired consistency
  • 1 teaspoon vanilla extract

Method
 

Prepare the Cake
  1. Preheat the oven to 350°F (175°C). Grease and flour a bundt pan.
  2. In a large mixing bowl, combine the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, oil, eggs, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chopped pecans if using.
  5. Pour the batter into the prepared bundt pan and smooth the top.
  6. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
Prepare the Glaze
  1. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
  2. Drizzle the glaze over the cooled bundt cake before serving.
