Ingredients
  

For the enchiladas
  • 8 pieces Corn tortillas
  • 2 cups Cooked shredded chicken
  • 1 cup Shredded cheese (e.g., Monterey Jack)
For the green sauce
  • 4 medium Tomatillos Husked and rinsed
  • 1 cup Fresh cilantro
  • 1 clove Garlic Minced
  • 1 jalapeño Jalapeño pepper Seeded and chopped
  • 1 cup Sour cream
  • 1 cup Chicken broth
  • 1 teaspoon Salt

Method
 

Prepare the green sauce
  1. In a pot, boil the tomatillos until soft, about 10 minutes. Drain and let cool.
  2. In a blender, combine the tomatillos, cilantro, garlic, jalapeño, sour cream, chicken broth, and salt. Blend until smooth.
Assemble the enchiladas
  1. Preheat the oven to 375°F (190°C).
  2. Warm the corn tortillas in a skillet to make them pliable.
  3. Fill each tortilla with shredded chicken, roll them up, and place them seam-side down in a baking dish.
  4. Pour the green sauce over the enchiladas and sprinkle with shredded cheese.
Bake
  1. Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
  2. Remove from the oven and let cool for a few minutes before serving.
