  • 4 pieces chicken breasts boneless and skinless
  • 2 cups carrots sliced
  • 2 cups potatoes diced
  • 1 cup onion chopped
  • 1 cup chicken broth low sodium
  • 2 teaspoons garlic minced
  • 1 teaspoon thyme dried
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Cooking Instructions
  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add the sliced carrots, diced potatoes, and chopped onion on top of the chicken.
  3. In a separate bowl, mix the chicken broth, minced garlic, thyme, salt, and black pepper.
  4. Pour the broth mixture over the chicken and vegetables in the crockpot.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through and vegetables are tender.
  6. Once cooked, shred the chicken with two forks and stir everything together before serving.
