- Cook bacon in a skillet over medium heat until crispy, then drain on paper towels, reserving the fat.
- In the same skillet, sauté diced onions and bell peppers in the reserved bacon fat until tender (about 5 minutes).
- In a large bowl, whisk together eggs, milk, salt, and pepper until frothy.
- Crumble the cooked bacon into the egg mixture along with sautéed vegetables and shredded cheese; stir gently to combine.
- Pour the mixture into the prepared baking dish and spread evenly. Bake for 30-35 minutes or until puffed up and golden brown.
