Method
 

Prepare the Salad
  1. In a mixing bowl, combine sliced cucumbers, halved cherry tomatoes, sliced red onion, and chopped parsley.
  2. In a separate bowl, whisk together apple cider vinegar, olive oil, honey, salt, and black pepper until well combined.
  3. Pour the dressing over the salad and toss gently to combine.
