  • 1 cup cooked chickpeas canned or boiled
  • 1 large cucumber diced
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh parsley chopped
  • 1 medium bell pepper diced
Dressing
  • 3 tablespoons olive oil extra virgin
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the chickpeas, cucumber, cherry tomatoes, red onion, parsley, and bell pepper.
  2. In a separate small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
