  • 1 large cucumber diced
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh parsley chopped
Dressing Ingredients
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon garlic minced
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the chickpeas, diced cucumber, halved cherry tomatoes, chopped red onion, and parsley.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper until well combined.
Combine and Serve
