Ingredients
  

Chicken and Seasoning
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup chicken broth low sodium
  • 1 tablespoon olive oil for sautéing
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup mixed vegetables carrots, peas, and corn

Method
 

Preparation
  1. In a skillet, heat olive oil over medium heat. Season the chicken breasts with garlic powder, onion powder, paprika, salt, and black pepper.
  2. Sear the chicken breasts in the skillet for 2-3 minutes on each side until browned.
  3. Transfer the seared chicken to the crock pot.
  4. Pour the chicken broth over the chicken and add the mixed vegetables.
Cooking
  1. Cover the crock pot and cook on low for 4-6 hours or until the chicken is cooked through and tender.
  2. Once cooked, shred the chicken with two forks and mix it with the broth and vegetables.
