Step-by-Step Cooking Walkthrough
  1. Preheat oven to 400°F (200°C). Pierce scrubbed potatoes several times with a fork. Rub lightly with oil and bake directly on oven rack for 45-50 minutes until fork-tender. Cool for 15 minutes.
  2. Cut potatoes in half lengthwise. Scoop out interior potato flesh with a spoon, leaving a sturdy 1/4-inch shell intact against the skin.
  3. Increase oven temperature to 425°F (220°C). Whisk together melted butter, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
  4. Brush both sides of potato skins generously with the seasoned butter. Place skins cut-side down on a baking sheet and bake for 8 minutes.
  5. Flip skins cut-side up and bake for another 6 minutes until edges are deeply golden and crispy.
  6. Fill each skin generously with cheddar, Monterey Jack, and crumbled bacon. Bake for 4-5 minutes until cheese is completely melted and bubbly.
  7. Top each warm skin with a dollop of cold sour cream and sliced green onions. Serve immediately!
