Creamy Tomato Basil Soup

Ingredients
  

Vegetables
  • 2 tablespoons olive oil for sautéing
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 cans diced tomatoes 28 oz each
  • 2 cups vegetable broth
  • 1 cup fresh basil packed, chopped
Dairy
  • 1 cup heavy cream
Seasonings
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 teaspoon sugar to balance acidity

Method
 

Prepare the base
  1. In a saucepan, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and cook for an additional minute until fragrant.
Cook the tomatoes
  1. Stir in the diced tomatoes (with juice) and vegetable broth. Bring to a simmer and cook for 20 minutes.
Blend the soup
  1. Remove the saucepan from heat and add the fresh basil. Use an immersion blender to puree the soup until smooth. Alternatively, transfer to a blender in batches.
Finish the soup
  1. Return the blended soup to the saucepan. Stir in the heavy cream, salt, pepper, and sugar. Heat gently until warmed through.
Serve
  1. Ladle the soup into bowls and garnish with additional basil if desired. Serve hot.
