Ingredients

Dry Oat & Apple Base
  • 2 cups rolled old-fashioned oats (certified gluten-free if needed)
  • 1 1/2 tsp ground Ceylon cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tsp baking powder
  • 1/2 tsp fine sea salt
  • 2 medium crisp sweet apples (Honeycrisp or Gala), cored and diced small
  • 1/2 cup raw pecans or walnuts, roughly chopped and divided
Silky Milk Custard
  • 1 3/4 cups whole milk (or unsweetened almond or oat milk)
  • 1/4 cup pure Grade A amber maple syrup
  • 1 large egg, lightly beaten
  • 3 tbsp unsalted butter, melted (or virgin coconut oil)
  • 1 tsp pure vanilla extract

Method

Step-by-Step Baking Walkthrough
  1. Preheat oven to 375°F (190°C). Lightly grease an 8x8-inch or 9x9-inch ceramic or glass baking dish with butter or cooking spray.
  2. In a large mixing bowl, combine rolled oats, ground cinnamon, nutmeg, baking powder, and fine sea salt. Toss in half of the diced apples and half of the chopped pecans until evenly dispersed.
  3. In a separate medium bowl, whisk together the milk, pure maple syrup, beaten egg, melted butter, and vanilla extract until smooth and fully blended.
  4. Spread the dry oat and apple mixture evenly across the prepared baking dish. Pour the liquid custard slowly and evenly over the oats, gently shaking the dish so the liquid settles between the grains. Scatter the remaining diced apples and pecans across the top.
  5. Bake for 35 to 40 minutes, until the center is set, the top is fragrant and lightly golden, and the apples are tender. Let rest for 5 minutes, then slice into 6 warm squares and serve with a drizzle of maple syrup and a splash of milk.
