Ingredients
  

Vegetables
  • 4 ears corn kernels removed
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 medium potatoes peeled and diced
  • 4 cups vegetable broth
Seasoning
  • 1 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper freshly ground
  • 1 teaspoon thyme dried
Garnish
  • 1/4 cup heavy cream for drizzling
  • 2 tablespoons chives chopped

Method
 

Prepare the Ingredients
  1. Remove the kernels from the corn and chop the onion and garlic.
  2. Peel and dice the potatoes.
Cook the Soup
  1. In a saucepan, sauté the onion and garlic until translucent.
  2. Add the corn, potatoes, and vegetable broth. Bring to a boil.
  3. Reduce heat and simmer for 20 minutes or until potatoes are tender.
Blend and Serve
  1. Use a blender to puree the soup until smooth. Return to the saucepan.
  2. Stir in salt, pepper, and thyme. Heat through.
  3. Serve hot, garnished with heavy cream and chives.
