Ingredients
  

Vegetables
  • 2 cups Fresh Corn Kernels Can use canned or frozen if fresh is not available
  • 1 medium Red Onion Finely chopped
  • 1 medium Red Bell Pepper Diced
  • 1 medium Jalapeño Seeded and minced
  • 1 cup Fresh Cilantro Chopped
  • 1 medium Lime Juiced
Seasoning
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper

Method
 

Preparation
  1. In a mixing bowl, combine the corn, red onion, red bell pepper, jalapeño, and cilantro.
  2. Add the lime juice, salt, and black pepper. Mix well to combine all ingredients.
  3. Taste and adjust seasoning if necessary.
  4. Serve immediately or refrigerate for 30 minutes to enhance flavors.
