Ingredients
  

Beans
  • 1 can black beans rinsed and drained
  • 1 can kidney beans rinsed and drained
  • 1 can chickpeas rinsed and drained
Vegetables
  • 1 red bell pepper diced
  • 1 cucumber diced
  • 1/2 red onion finely chopped
  • 1/4 cup fresh parsley chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare the Ingredients
  1. In a large mixing bowl, combine the black beans, kidney beans, and chickpeas.
  2. Add the diced red bell pepper, cucumber, red onion, and parsley to the bowl.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, salt, and black pepper.
Combine and Serve
  1. Pour the dressing over the bean and vegetable mixture and toss to combine.
  2. Chill in the refrigerator for at least 30 minutes before serving to enhance the flavors.
